most illustrations i see show more footman with sabatons, more so than even on horseback.

And especially if you plan to use the harness for jousting, you wouldn't need Sabatons.
If the lances are dipping that low, I think the problem might be more of what's across the tilt than your harness  ;)

Maybe riveted maille would stand up to a thrust, but butted maille won't. At all.

As for the sabatons, I'm a dirty mother in a fight. If I'll stab someone in the foot than there's bound to be others who'll do the same. hehe

Well yeah. General rule of thumb, butted maille sucks at life.
Historical maille, well that's a different story.

And sheesh. If you're gonna step on peoples toes, wear sabatons before they apply the golden rule to you  ;)
