I use the heavy weight linen for most anything although for a pennon the mid-weight might be okay.

I think you'd want to use silk if you're going to go the period fabric route, but that = $$$$

Linen won't fly nearly as well.

I bear that in mind for the next time I happen upon a large sum of cash and have an itch to make a pennon.
